LOW CARB BROCCOLI CHEESE CASSEROLE

This LOW CARB BROCCOLI CHEESE CASSEROLE comes together quick and easy for dinner. A flavorful, filling meal that can be served with rice for the non low carb folks.

Ingredients

  • 2 Lbs Boneless Skinless Chicken Thighs
  • 1 Lb Broccoli Florets
  • 8 ounces Cream Cheese
  • 1/2 Cup Mayonnaise
  • 1/2 Cup Heavy Cream
  • 1 teaspoon Garlic Powder
  • 2 Tablespoons Dry Ranch Seasoning
  • Salt/Pepper
  • 3 Cups Shredded Cheddar Cheese – divided

Instructions

  • Cook chicken using preferred method. I prefer to poach the chicken thighs (simmer in water 15-20 minutes). Chop and set aside.
  • Blanch broccoli – Drop broccoli into boiling water. Boil 2 minutes then immediately transfer broccoli to ice cold water to cool. Drain, set aside.
  • Preheat oven to 375ºF
  • Mix cream cheese, mayo, cream, garlic powder and ranch season until smooth. Salt and pepper to taste.
  • Add chicken, broccoli and 1 cup shredded cheese to creamy mixture. Stir together then transfer to casserole dish.
  • Bake 15 minutes. Top with remaining shredded cheese. Broil on high 3-5 minutes to brown. Let cool 5 minutes before serving.
