While most people may reach for the chicken breasts when grocery shopping, I always reach for chicken thighs. Thighs are juicier, more flavorful and do not overcook as easily as breasts. Bonus, they are cheaper too!

  • Bone-In, Skin On Chicken Thighs
  • Oil
  • Salt/Pepper
  • Unsalted Butter
  • Lemon
  • Parsley

How To Bake Chicken Thighs Bone-In

  1. Preheat oven to 425ºF
  2. Pat chicken thighs dry with paper towel. Salt and pepper generously.
  3. Heat oil in cast iron pan over medium high heat.
  4. Place chicken thighs top side down in hot oil. Fry 3-4 minutes or until tops are deep brown. Flip, turn off heat, top with butter then transfer to oven.
  5. Bake for 20 minutes. Check for doneness then bake for 5-10 more minutes or until internal temp reaches 165ºF.
  6. Top with chopped parsley and squirt with lemon. Serve with lemon and drizzle buttery juices over the top.

Yes, it typically takes an additional 10-15 minutes to cook bone in chicken thighs. This will vary depending on the size of the thighs.

Notes

If not using the cast iron pan method, place thighs on rimmed baking sheet or baking dish with butter. Bake at 425ºF until 160ºF internal temp then broil on high to finish.
