Easy Baked Bone In Chicken Thighs

Ingredients

  • 2 Lbs Bone-In Skin On Chicken Thighs
  • 3-4 Tablespoons Oil
  • Salt/Pepper
  • 1 Stick 1/2 cup Unsalted Butter
  • 2 Lemons
  • Fresh Chopped Parsley

Instructions

  • Preheat oven to 425ºF
  • Pat chicken thighs dry with paper towel. Salt and pepper generously.
  • Heat oil in cast iron pan over medium high heat.
  • Place chicken thighs top side down in hot oil. Fry 3-4 minutes or until tops are deep brown. Flip, turn off heat, top with butter then transfer to oven.
  • Bake for 20 minutes. Check for doneness, spoon juices over thighs then bake for 5-10 more minutes or until internal temp reaches 165ºF.
  • Top with chopped parsley and squirt with lemon. Serve with lemon and drizzle buttery juices over the top.

Notes

If not using the cast iron pan method, place thighs on rimmed baking sheet or baking dish with butter. Bake at 425ºF until 160ºF internal temp then broil on high to finish.
