Keto Friendly Low Carb Chicken Salad

Chicken Salad is great for meal prep because it can be made ahead and eaten in so many ways. Also, the flavor combinations are limitless. This Red Curry Chicken Salad is for those that want a unique twist and punch of flavor in their chicken salad.

I enjoy this particular chicken salad over rice. But if you are going low-carb, it is fantastic over cauliflower-rice or on top of salad greens.

  • Celery
  • Mayonnaise
  • Red Curry Paste
  • Cilantro
  • Lime

How Do You Make Easy Chicken Salad with Curry

  1. Prepare chicken if necessary (see below). For a short cut I use store bought cooked chicken.
  2. Combined all ingredients in large bowl then mix. Adjust the amount of mayo and curry paste to your preferences.
  3. Serve over rice, salad, on a sandwich, in a wrap or alone.

How Do You Cook Chicken For Chicken Salad

Grilled chicken, Oven Baked Chicken, Air Fryer Chicken Breast, Poached ChickenRoast Chicken,  Pressure Cooker Chicken or even a store bought rotisserie chicken. I buy the pre-cooked, pre-pulled rotisserie chicken from Costco.

How Should You Serve Chicken Salad

In wraps, sandwiches, over rice or on a green salad. Chicken salad is also great as a snack with crackers.

  • 3 Cups Pulled/Shredded Chicken
  • 3 Celery Ribs - chopped or sliced
  • 1/2-3/4 Cup Mayonnaise - to preference
  • 1-2 teaspoons Red Curry Paste - to taste
  • Handful Fresh Cilantro - chopped
  • Juice of 1/2 a Lime
  • Salt/Pepper - to taste
