Curry Chicken Salad Recipe

Ingredients

  • 3 Cups Pulled/Shredded Chicken
  • 3 Celery Ribs - chopped or sliced
  • 1/2-3/4 Cup Mayonnaise - to preference
  • 1-2 teaspoons Red Curry Paste - to taste
  • Handful Fresh Cilantro - chopped
  • Juice of 1/2 a Lime
  • Salt/Pepper - to taste

Instructions

  • Prepare chicken if necessary (see below). For a short cut I use store bought cooked chicken.
  • Combined all ingredients in large bowl then mix.
  • Start with the lower amount of mayo and curry paste then adjust to your preferences.
  • Serve over rice, salad, on a sandwich, in a wrap or alone.

Notes

Ways To Prep Chicken For Chicken Salad:
Grilled Chicken, Oven Baked Chicken, Air Fryer Chicken Breast, Poached Chicken, Roast Chicken, Pressure Cooker Chicken or even a store bought Rotisserie Chicken. I buy the pre-cooked, pre-pulled rotisserie chicken from Costco.
