Ingredients

  • 6 slices bacon
  • 6 large eggs
  • 2 tablespoons milk
  • ½ teaspoon Kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon extra-virgin olive or avocado oil for the pan
  • 6 street tacos flour tortillas
  • 1 avocado diced for garnish
  • ½ cup shredded cheddar cheese
  • 2 tablespoons chopped cilantro optional for garnish
  • Lime wedges for garnish (optional)

Instructions

  • Preheat the oven to 400ºF. Place the bacon on a rimmed baking sheet and bake for 15-20 minutes, or until crispy. Crumble the cooked bacon - set aside.
  • In a bowl, whisk together the eggs, milk, salt, and pepper.
    Heat olive oil in a nonstick skillet over medium-low heat.
  • Pour in the eggs and cook for 10 seconds before flipping them with a rubber spatula. Continue cooking the eggs on medium-low, stirring every few seconds until they are soft and fluffy. Remove the pan from the heat.
  • Warm the tortillas in a greased skillet over medium heat - set them aside.
  • Assemble the breakfast tacos by dividing the scrambled eggs between the tortillas. Top with crumbled bacon, diced avocado, cheddar cheese, chopped parsley, and a squeeze of lime juice.
