Recipe Tips:
- Feel free to use larger size tortillas or even low carb tortillas.
- Additional topping ideas: breakfast sausage, sauteed spinach or kale, chorizo, pico de gallo, sour cream, black beans, queso cheese, jalapeños and fried breakfast potatoes.

BREAKFAST TACOS
Ingredients
- 6 slices bacon
- 6 large eggs
- 2 tablespoons milk
- ½ teaspoon Kosher salt
- ½ teaspoon black pepper
- 1 teaspoon extra-virgin olive or avocado oil for the pan
- 6 street tacos flour tortillas
- 1 avocado diced for garnish
- ½ cup shredded cheddar cheese
- 2 tablespoons chopped cilantro optional for garnish
- Lime wedges for garnish (optional)
Instructions
- Preheat the oven to 400ºF. Place the bacon on a rimmed baking sheet and bake for 15-20 minutes, or until crispy. Crumble the cooked bacon - set aside.
- In a bowl, whisk together the eggs, milk, salt, and pepper.
Heat olive oil in a nonstick skillet over medium-low heat. - Pour in the eggs and cook for 10 seconds before flipping them with a rubber spatula. Continue cooking the eggs on medium-low, stirring every few seconds until they are soft and fluffy. Remove the pan from the heat.
- Warm the tortillas in a greased skillet over medium heat - set them aside.
- Assemble the breakfast tacos by dividing the scrambled eggs between the tortillas. Top with crumbled bacon, diced avocado, cheddar cheese, chopped parsley, and a squeeze of lime juice.
