Roasted Chicken Thighs In Oven

Everyone needs quick, easy and nutritious dinners for those busy weeknights. This is one of those dinners.

Chicken thighs are my personal favorite cut because they are less expensive than chicken breasts, more flavorful and more forgiving. You don’t have to babysit chicken thighs as much as chicken breast because they do not overcook as easily.

I also always buy boneless thighs simply because I don’t like to deal with cutting around a bone when I’m eating dinner.

How Long Does It Take To Cook Boneless Chicken Thighs At 400ºF

It varies depending on the size of the chicken thighs. Mine are usually done in about 35 minutes.

I also broil on high the last 5 minutes to give the tops a little sizzle.

  • Boneless, Skinless Chicken Thighs
  • Small Gold Potatoes
  • Carrots
  • Olive Oil
  • Dried Italian Season
  • Salt/Pepper

How To Make Baked Chicken Thighs

  1. Preheat oven to 400ºF
  2. Cut potatoes in quarters. Halve carrots lengthwise then cut into 3-4 inch pieces.
  3. Place chicken thighs, potatoes and carrots on greased rimmed baking sheet.
  4. Drizzle with oil. Sprinkle Italian seasoning, salt and pepper. Toss potatoes and carrots.
  5. Bake for 30 minutes then check chicken for doneness. Broil on high 5 minutes or until chicken internal temp reaches 165ºF.
