Ingredients

  • 2 Lbs Boneless Skinless Chicken Thighs
  • 1 Lb Small Gold Potatoes
  • 1 Lb Carrots
  • 4 Tablespoons Olive Oil
  • 1 Tablespoon Dried Italian Season
  • Salt/Pepper

Instructions

  • Preheat oven to 400ºF
  • Cut potatoes in quarters. Halve carrots lengthwise then cut into 3-4 inch pieces.
  • Place chicken thighs, potatoes and carrots on greased rimmed baking sheet.
  • Drizzle with oil. Sprinkle Italian seasoning, salt and pepper. Toss potatoes and carrots.
  • Bake for 30 minutes then check chicken for doneness. Broil on high 5 minutes or until chicken internal temp reaches 165ºF.
