Overnight Oats

My local farmer’s market has amazing peaches.  Seriously, there is a long line at the peach stand the entire day.

That just proves that these peaches are crazy good, because I do NOT stand in lines! Yeah, I’m a diva.

But I stand in line for fresh local peaches at my farmer’s market.

I devoured most of the peaches whole and used a few of the leftover peaches to create this healthy and satisfying breakfast.  Plus, it takes very little preparation.  No-Cook Oatmeal is perfect for morning haters {like me}.

I’ll say it again, I Am Not A Morning Person.  I am a total dragon-lady  before 10am.  But, my mornings just got a little bit happier with this Peaches and Cream No-Cook Oatmeal.  A little bit.

Peaches & Cream Oatmeal

Ingredients

  • 3/4 Cup Old Fashioned Oats
  • 3/4 Cup Coconut Milk
  • 1/8 teaspoon Ground Cinnamon
  • 1 Tablespoon Maple Syrup or Brown Sugar
  • 1 Peach - peeled and cubed

Instructions

  • Combine all ingredients in a mason jar or airtight container.
  • Refrigerate overnight.
  • Serve cold with a drizzle of maple syrup.

  1. I had to laugh at dragon lady! TOO good!
    I am in love with oatmeal, and it everyday…but I need some variations other than just putting cinnamon and apples in….like this amazing peaches and cream version! Pinned!

  2. Our local peaches aren’t ripe yet. I’m going to have to make your oatmeal when they are. I’m a morning person. So I’ll have to remember the dragon lady before 10am rule 😉

    1. Haha! Don’t worry. I don’t bring the dragon lady on vacation. Waking up with a smile is much easier in the Caribbean with zero responsibilities. Ahhhh, I’m smiling just thinking about it 😀
