I am most definitely a fan of the typical bbq pulled chicken sandwiches. But sometimes you want something a little different.

Back when I was a kid, chicken nuggets were my thing. (now, not so much, ewww)

That was back before every food was slathered and dipped in ranch dressing. So the popular chicken nugget dips were barbeque or honey mustard. I always chose the honey mustard. This memory came back to me when I was trying to create a Shredded Chicken Sandwich Recipe that wasn’t barbeque.

Slow Cooker Honey Mustard Chicken

Ingredients
Chicken
  • 3 lbs Foster Farms Simply Raised Thigh Fillets boneless, skinless
  • 1/4 Cup Honey
  • 3 Tablespoons Whole Grain Dijon Mustard
  • 1/4 Cup Water
  • 2 Tablespoons Water additional
  • 2 teaspoons Cornstarch
Slaw
  • 2 Cups Red Cabbage chopped or shredded
  • 1/4 Cup Olive Oil
  • 3 Tablespoons Apple Cider Vinegar
  • Pinch of Salt/Pepper
  • 1 teaspoon Whole Grain Dijon Mustard
  • 2 teaspoons Honey
  • 2 teaspoons Sugar
Instructions
Chicken
  1. Mix honey, mustard and the 1/4 cup water. Pour mixture into large slow cooker.
  2. Add chicken thighs to slow cooker and toss with sauce.
  3. Cook on low for 4-4½ hours.
  4. Mix 2 Tb water and cornstarch and add to the slow cooker. Shred chicken and cook for 20 more minutes or until thickened.
  5. Salt and pepper to taste.
Slaw
  1. Mix all ingredients. Refrigerate overnight for best results.
  2. Serve honey mustard chicken on a soft roll with slaw on top.

  3. I made this for my husband’s birthday dinner, and we were SO disappointed. I followed the recipe exactly (except the recipe never tells you when to actually shred the chicken so I took the chicken out and shredded it while I had the cornstarch thickening and returned the chicken to crock pot to heat up again)…. There was NO flavor. It tasted like plain chicken that was cooked in its own juices. Absolutely no hint of honey, mustard, or flavor at all. The cabbage slaw was the same. Not good at all. We threw all of the rest away. Super disappointed!

      I’m sad to hear that this recipe was not a hit at your house. And I’m especially sad to hear that the food was tossed in the garbage. Typically I try to help with any issues that a reader may have with a recipe. But, this always turns out saucy for me (the photos even show the sauce dripping off). It is definitely a more mild flavor compared to the regular bbq pulled chicken. Thanks for the feedback and for pointing out that the recipe does not instruct when to shred the chicken. I’ll go ahead and add that for anyone that may be wondering. Have a great day!

  4. Full disclosure: I didn’t make the slaw–not because it didn’t sound good, but because I didn’t have the ingredients for it, and I was strapped for time. I did, however, make the chicken. It wasn’t until everything was already in the slow cooker and simmering that I read the reviews, and saw that one commented it was so bland it was inedible. Uh oh. I tend to prefer stronger-flavoured food, especially a nice zippy mustard flavour…but what could I do? It was already in the crock pot, and I had used up all my mustard in the prescribed 3 tbsp–I couldn’t even add another squirt to try to liven things up.

    I’m glad I didn’t have more mustard, though, because this turned out perfectly. It is true that it is more mild-flavoured, but it’s a good flavour: very well balanced and tasty. More mustard would have spoiled it. My husband loved this and has requested I make it again. I also appreciate how easy it is; just a few ingredients, virtually no prep, and delicious! I wonder if it might have something to do with what type of mustard and what type of honey you use. Mine was nothing special, though; just Bee Maid honey and no-name dijon mustard. Next time I’ll plan ahead and make the slaw as well.
