This Citrus Smoothie is a super refreshing drink full of lemon, lime and coconut flavor.  It tastes like an island vacation!

Cold, slushie drinks always remind me of an island getaway.

Speaking of island vacation, I just returned from a Caribbean cruise.  I was there for a photography retreat and some R&R.

Weight Watchers helped me to lose those last couple pounds before my trip.  I’m happy to report that I felt very comfortable in my bathing suit.  A year ago that would NOT have been the case.

See.  There I am soaking up some sun on the beach!

I’ll be sharing more about my island experience on a future post.  But, here is just a peek at the beauty that surrounded me.  The colors in the Caribbean are just amazing!

I’m not gonna lie.  I was not counting points or working out during my trip.  I did try not to stuff myself {which is very difficult on a cruise}.  Food Is Everywhere!

I also tried to stay active.  I took the stairs instead of elevators.  There was lots of walking throughout the week.  And I tried fun, physically activities like FlowRider surfing.

Although, I don’t know how much of a workout the FlowRider was.  Mostly I just fell.

Now I’m home and getting back on track.

Weight Watchers is helping me to maintain my weightloss.  I’m tired of yoyo-ing.

I loved the feeling of being comfortable on the beach.  Not trying to cover up.  So I’m staying focused on eating right and keeping active.

And stay tuned because I have fallen in love with the Weight Watchers smart phone app and I can’t wait to share that with you.

Citrus Smoothie

Ingredients

  • 3 Cups Ice
  • 1 Cup Unsweetened Coconut Milk
  • Juice and Zest from 1 Small Lime
  • Juice and Zest from 1 Small Lemon
  • 1 Tablespoon Zero Calorie Sweetener, I use Truvia

Instructions

  1. Pulse all ingredients in blender until a slushie consistency.

Notes

1 Weight Watchers Point for the entire batch. Serves 2.
