Bacon Cheeseburger Meatloaf Recipe

This Bacon Cheeseburger Meatloaf is a fun twist on a family favorite. Make oven potato wedge fries and serve with the burger secret sauce for a fast-food inspired homemade dinner for the family.

Why Does Meatloaf Fall Apart

Meatloaf needs the breadcrumbs in order to hold together. This recipe leans more towards the falling apart style because I prefer it that way. I personally am not a fan of meatloaf that is overly loaf-like ← is that a thing 😆

If you prefer a meatloaf that completely stays together and is molded, feel free to increase the bread crumbs and milk by 1/4 cup each.

How To Tell When Meatloaf Is Done

When done meatloaf will register 160ºF in the middle.

You do not want a pink middle but you also do not want to overcook your meatloaf. Ensuring that the loaf shape is a uniform thickness will help with even cooking.

  • Ground Beef
  • Bread Crumbs
  • Whole Milk
  • Large Eggs
  • Bacon
  • Salt/Pepper
  • Garlic Powder

How To Make Bacon Cheeseburger Meatloaf

  1. Preheat oven to 350ºF
  2. Mix meatloaf ingredients until just combined, try not to over-mix.
  3. Form into approximately 10″x 2.5″ loaf and transfer to a rimmed baking sheet lined with greased foil.
  4. Bake for 45 minutes.
  5. Top with cheese and bake for 5 more minutes or until meatloaf is cooked through.

Ingredients

Meatloaf

  • 2 Lbs Lean Ground Beef
  • 1/2 Cup Bread Crumbs
  • 1/2 Cup Whole Milk
  • 2 Large Eggs
  • 8 Slices Cooked Bacon (chopped)
  • 2 teaspoons Garlic Powder
  • Generous Pinch Salt/Pepper
  • 2 Cups Shredded Cheddar Cheese

Secret Sauce

  • 1/2 Cup Mayonnaise
  • 1/4 Cup Ketchup
  • 1 teaspoon Yellow Mustard
  • 1/4 Cup Finely Chopped Dill Pickles
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Smoked Paprika
  • Salt/Pepper to taste

Instructions

Meatloaf

  • Preheat oven to 350ºF
  • Mix ground beef, breadcrumbs, milk*, eggs, bacon, garlic powder, salt and pepper until just combined, try not to over-mix.
  • Form into approximately 10″x 2.5″ loaf and transfer to a rimmed baking sheet lined with greased foil.
  • Bake for 45 minutes.
  • Top with cheese and bake for 5 more minutes or until meatloaf is cooked through. Serve with secret sauce.

Secret Sauce

  • Mix all sauce ingredients until combined and refrigerate while preparing the meatloaf.
