Make lunchtime extra special with this Smoked Salmon Avocado Toast. Crusty artisan bread topped with avocado, cucumber, micro greens, smoked salmon, lemon and dill. An easy recipe that is full of flavors!
I try to remember my mantra in life and in the kitchen. . . Keep It Simple, Stupid. I have a tendency to overthink and complicate things unnecessarily. When it comes to everyday life, sometimes it is the simple moments that are truly the most important. The same goes for cooking. Simple and easy does not have to mean less delicious. In fact, often times the pure, uncomplicated recipes are the best!
This Smoked Salmon Avocado Toast is a shining example of my theory. Using a few quality ingredients to create this meal is all you need. This has everything. Fresh produce, bright lemon, creamy avocado, briny smoked salmon and a good crusty bread. Satisfying, tasty and gorgeous to look at.
I could eat this for lunch every day for the rest of my life!
