My favorite summer food: DIP! I love just about anything that I can dip into. I especially love when they are super easy like this Chipotle Black Bean Dip. Seriously, blend a handful of ingredients together and you have this awesome homemade dip. We don’t need those pop-top metal cans of bean dip anymore. Oh no, we can do it ourselves. And do it better!

Plus, you better believe that this dip is sooooo much healthier than any dip coming out of a metal can! Don’t get me wrong, the canned bean dip has it’s place and I have eaten my fair share. A spontaneous lake trip, camping, dinner at a gas station or if the apocalypse happens. Canned bean dip is totally appropriate for all of those scenarios. For every other occasion . . . you should start making your own. Trust me.

Chipotle Black Bean Dip

Ingredients

  • 2 Cans Organic Black Beans - drained and rinsed 15oz
  • 1 Garlic Clove - chopped
  • 1 Small Chipotle Pepper - chopped
  • 1 Tablespoon Adobo Sauce
  • Juice of 1 Lime
  • 2 Tablespoons Olive Oil or to desired consistency
  • Handful Fresh Cilantro
  • Pinch Sea Salt to taste
  • 1/4 teaspoon Cumin

Instructions

  • Combine all ingredients in blender. Process until smooth.
  • Serve with salsa, sour cream and tortilla chips.

Notes

Makes 2½ Cups
Omit chipotle pepper for mild bean dip.
