Avocado Shrimp Salad
Ingredients
- 1 lb Uncooked Deveined Shrimp
- 1/4 Cup Finely Chopped Red Onion
- 15 Grape Tomatoes - halved
- 15 Sunburst Tomatoes - halved
- 2 Avocados - peeled pitted & cut into chunks
- Juice of 2 Small Limes
- 1/4 teaspoon Garlic Powder
- 1/8 teaspoon Cumin
- Pinch Salt/Pepper
- Drizzle of Olive Oil
- Handful Fresh Cilantro - chopped
Instructions
- Drop shrimp into boiling water and cook until pink and curled into a "C" shape. (approximately 2 minutes depending on size) Drain shrimp and run under cold water to stop cooking. Refrigerate until cold. Peel shrimp (if necessary) and chop into bite size chunks.
- Combine shrimp and all remaining ingredients in large bowl. Gently stir.
- Refrigerate until served.
