Avocado Shrimp Salad

Ingredients

  • 1 lb Uncooked Deveined Shrimp
  • 1/4 Cup Finely Chopped Red Onion
  • 15 Grape Tomatoes - halved
  • 15 Sunburst Tomatoes - halved
  • 2 Avocados - peeled pitted & cut into chunks
  • Juice of 2 Small Limes
  • 1/4 teaspoon Garlic Powder
  • 1/8 teaspoon Cumin
  • Pinch Salt/Pepper
  • Drizzle of Olive Oil
  • Handful Fresh Cilantro - chopped

Instructions

  • Drop shrimp into boiling water and cook until pink and curled into a "C" shape. (approximately 2 minutes depending on size) Drain shrimp and run under cold water to stop cooking. Refrigerate until cold. Peel shrimp (if necessary) and chop into bite size chunks.
  • Combine shrimp and all remaining ingredients in large bowl. Gently stir.
  • Refrigerate until served.
