- Stone Ground Mustard
- Salt/Pepper
- Baby Spinach
- Blueberries
- Pecans
- Sunflower Seeds
- Blue Cheese Crumbles
How To Make Fresh Spinach Salad and Blueberry Vinaigrette
- Mix olive oil, balsamic vinegar, blueberry preserves, mustard, salt and pepper. Whisk until fully combined and emulsified.
- Mix spinach, blueberries, pecans, sunflower seeds and blue cheese. Toss with vinaigrette until evenly coated.

- 2 Tablespoons Balsamic Vinegar
- 2 Tablespoons Blueberry Preserves
- 1 Tablespoon Stone Ground Mustard
- Salt/Pepper - to taste
- 16 ounces Baby Spinach
- 6 ounces Blueberries
- 1 Cup Pecan Halves
- 1/4 Cup Sunflower Seeds
- 1/2 Cup Blue Cheese Crumbles
Instructions
- Mix olive oil, balsamic vinegar, blueberry preserves, mustard, salt and pepper. Whisk until fully combined and emulsified.
- Mix spinach, blueberries, pecans, sunflower seeds and blue cheese. Toss with vinaigrette until evenly coated.
Notes
If you do not like blue cheese, goat cheese tastes great in this salad.

This has been a crowd pleaser every time I’ve made it! I have switched out the blue cheese for feta and just as good. Also use “salad topper” pecans for ease. It’s a standard now in our house.
