Sometimes I just crave a plate full of meat! Especially when I am doing good and working out consistently. My body needs a boost of protein.

This Easy Turkey Meatloaf Recipe is perfect for those days. Meatloaf has been a favorite meal of mine since childhood. So I get a satisfying meal that is light, flavorful and made with fresh ingredients.

Oh, and this meal is dairy free!

Easy Turkey Meatloaf with English Pea Puree

Ingredients

Meatloaf

  • 2 Lbs Ground Turkey
  • Cups Panko Bread Crumbs
  • 2 Large Eggs
  • 1/2 teaspoon Pepper
  • 1 teaspoon Salt
  • 1 teaspoon Garlic Powder
  • 1/4 teaspoon Cumin
  • 1 teaspoon Finely Chopped Flat Leaf Parsley
  • 2 Tablespoons Olive Oil
  • 1/2 Cup Unsweetened Silk Soymilk

Pea Puree

  • 2 Cups Shelled English Peas
  • Pinch Salt/Pepper
  • 1 Tablespoon Fresh Lemon Juice
  • 1 Tablespoon Chopped Flat Leaf Parsley
  • 3 Tablespoons Olive Oil
  • 1/4 Cup Unsweetened Silk Soymilk

Instructions

Meatloaf

  • Preheat oven to 350°F
  • Combine all meatloaf ingredients in large bowl. Use your hands to mix.
  • Transfer meat mixture to a large bread loaf pan to form. Invert loaf pan onto roasting pan that has been lined with foil and sprayed with nonstick.
  • Bake meatloaf for 1 hour or until cooked through. Broil 2-3 minutes to brown top.

Pea Puree

  • Drop peas into salted and boiling water for 90 seconds. Drain and transfer to an ice bath for 2-3 minutes. Drain and set aside 1/2 cup peas.
  • Transfer the remaining 1½ cups peas to blender or food processor.
  • Add the remaining puree ingredients and blend until smooth.
  • Serve meatloaf topped with pea puree and whole peas.
