Easy Pineapple Chicken Kabobs In Oven

These kabobs are a fun way to serve chicken dinner. The kids will love all the bright colors and the fact that this dinner involves pineapple. Plus everybody enjoys saying the word Kabob 😆

The best part (in my opinion) is that these kabobs are oven baked so there is no heating up a grill or even stepping foot outside. Perfect for anyone that doesn’t enjoy standing over a hot grill while swatting away bugs.

What Goes With Kabobs

How To Make Chicken and Pineapple Skewers

  1. If using wooden skewers soak in water for 15 minutes prior to kabob assembly.
  2. Preheat oven to 450ºF
  3. Cut pineapple, peppers, onion and chicken into chunks large enough to skewer. Toss with oil, salt and pepper.
  4. Skewer chicken, peppers, onion and pineapple. Transfer kabobs to greased rimmed baking sheet.
  5. Bake for 20 minutes then brush with sauce. Broil on high 3-5 minutes or until chicken is cooked through.

Sauce:

  1. Combine soy sauce, sesame oil, garlic powder, brown sugar and chili sauce. Slowly add in cornstarch while whisking.

NOTES:

If not cooking and serving immediately, place peppers around chicken pieces and the pineapple between. This will prevent the fruit acids from breaking down the chicken.

For a shortcut use store bought Teriyaki Sauce instead of this homemade sauce.
