- Thin Bacon
How To Make Bacon Sweet Potato Bites
- Preheat oven to 400ºF
- Cut sweet potato into 1 inch pieces and transfer to medium pot. Cover with water and bring to a boil. Boil 3-4 minutes or until just barely fork tender. Drain and transfer to large bowl.
- Toss sweet potatoes with cinnamon, cumin, paprika and ghee.
- Cut bacon strips into thirds. Wrap each sweet potato bite with bacon and transfer to a greased, rimmed baking sheet seam side down. Brush remaining ghee/spice mixture over the tops of sweet potatoes.
- Bake 15 minutes, flip and bake 10 more minutes or until sweet potatoes are tender and bacon is crisp.
Original recipe calls for 1/2 a sweet potato and 9 slices of baon. I preferred to increase the amount of sweet potato and use the same amount of all other ingredients.
