Ingredients Needed For Sweet Potato Bacon Bites (screenshot for grocery list)

  • Sweet Potato
  • Cinnamon
  • Cumin
  • Paprika
  • Ghee
  • Thin Bacon

How To Make Bacon Sweet Potato Bites

  1. Preheat oven to 400ºF
  2. Cut sweet potato into 1 inch pieces and transfer to medium pot. Cover with water and bring to a boil. Boil 3-4 minutes or until just barely fork tender. Drain and transfer to large bowl.
  3. Toss sweet potatoes with cinnamon, cumin, paprika and ghee.
  4. Cut bacon strips into thirds. Wrap each sweet potato bite with bacon and transfer to a greased, rimmed baking sheet seam side down. Brush remaining ghee/spice mixture over the tops of sweet potatoes.
  5. Bake 15 minutes, flip and bake 10 more minutes or until sweet potatoes are tender and bacon is crisp.

  • 7-9 Slices Thin Bacon

Notes

Original recipe calls for 1/2 a sweet potato and 9 slices of baon. I preferred to increase the amount of sweet potato and use the same amount of all other ingredients. This will make 15-20 sweet potato bites, depending on size.
