Easy Pineapple Chicken Kabobs In Oven
These kabobs are a fun way to serve chicken dinner. The kids will love all the bright colors and the fact that this dinner involves pineapple. Plus everybody enjoys saying the word Kabob 😆
The best part (in my opinion) is that these kabobs are oven baked so there is no heating up a grill or even stepping foot outside. Perfect for anyone that doesn’t enjoy standing over a hot grill while swatting away bugs.

Ingredients Needed For This Chicken Kabob Recipe (screenshot for grocery list)
- Fresh Pineapple
- Red Bell Peppers
- Red Onion
- Chicken Breast
- Oil
- Soy Sauce
- Toasted Sesame Oil
- Garlic Powder
- Brown Sugar
- Cornstarch
- Chili Sauce
How To Make Chicken and Pineapple Skewers
- If using wooden skewers soak in water for 15 minutes prior to kabob assembly.
- Preheat oven to 450ºF
- Cut pineapple, peppers, onion and chicken into chunks large enough to skewer. Toss with oil, salt and pepper.
- Skewer chicken, peppers, onion and pineapple. Transfer kabobs to greased rimmed baking sheet.
- Bake for 20 minutes then brush with sauce. Broil on high 3-5 minutes or until chicken is cooked through.
Sauce:
- Combine soy sauce, sesame oil, garlic powder, brown sugar and chili sauce. Slowly add in cornstarch while whisking.
NOTES:
If not cooking and serving immediately, place peppers around chicken pieces and the pineapple between. This will prevent the fruit acids from breaking down the chicken.
For a shortcut use store bought Teriyaki Sauce instead of this homemade sauce.

- 2 Red Bell Peppers - seeded, cut into large chunks
- 1 Red Onion - cut into large chunks
- 2 Lbs Chicken Breast - cut into 2 inch chunks
- 2-3 Tablespoons Oil
- Salt/pepper
- 2 Tablespoons Soy Sauce
- 1 Tablespoon Toasted Sesame Oil
- 1 teaspoon Garlic Powder
- 2 Tablespoons Brown Sugar
