Keto Friendly Scallops In Lemon Garlic Butter

These scallops are oven baked and loaded with flavor. Just a few simple ingredients make this seafood dinner unbelievable! The scallops are baked in a bath of melted butter, lemon and garlic. Basically this is like shrimp scampi but with scallops.

This is a naturally low carb recipe that fits within the Keto Diet. It is also gluten free and grain free.

How Do You Know When Scallops Are Done

Scallops will begin to flake apart at the edges when they are done. You can press on the tops with your finger and feel the firmness when done as well. Or, just to be sure you can always slice into one to ensure the middle is not shiny and raw.

You want to serve scallops as soon as they are done cooking.

  • Large Scallops (fresh or frozen)
  • Oil
  • Salt/Pepper
  • Lemon
  • Butter
  • Garlic
  • Parsley

How Do You Prepare Frozen Scallops

First thaw your frozen scallops. Overnight, in the refrigerator. Do not try to fast-track this step.

If the scallops have the mini muscle on the sides, go ahead and remove those. Don’t worry, you will be able to see these little pieces of flesh on the sides of the scallops. Use your finger to pinch it and pull it off the scallop then discard.

How To Cook Baked Scallops

Thaw scallops completely if frozen.

Preheat oven to 400ºF

Toss scallops with oil, salt and pepper. Transfer to a large greased roasting dish. Arrange lemon wedges around the scallops.

Mix melted butter, garlic, salt and pepper. Spoon mixture over scallops.

Bake for approximately 15 minutes. Broil on high for 3 minutes. (Time will vary depending on size of scallops. For smaller scallops begin to check doneness at 8 minutes.)

  • 1 Lb Large Scallops - thawed and prepped
  • 1 Tablespoon Oil
  • Salt/Pepper
  • 1-2 Lemons - cut into wedges
  • 1/2 Cup Butter - melted
  • 5 Garlic Cloves - grated
  • Chopped Fresh Parsley

  1. Absolutely delicious! Cooked 8 thawed scallops which were done in13 minutes, added a splash of Chardonnay and a pinch of sugar to caramelize. So easy and neither lemon or garlic amounts overpowered the scallops. Served over angel hair pasta. Best baked scallops recipe I’ve made. Thanks for posting.
