Chicken Taco Bake Casserole With Rice
Quick and easy dinners are a must for todays busy lifestyle. We want to feed our family a nutritious homemade meal but we don’t have hours to spend in the kitchen. This taco casserole comes together in no time. Especially if you cheat (like me) and buy precooked chicken at Costco. In fact, I do the super-duper cheat and buy the precooked de-boned rotisserie chicken at Costco. . . Life Saver!
If you are making your own chicken here are a few methods:
Oven Baked Chicken Breast – Air Fryer Chicken Breast – Poached Chicken Breast
As for the rice, use whatever brown or white rice you prefer. Standard cook rice or quick cook rice will both work fine. Just be sure to cook slightly al dente since it will be baked as well.
Is Taco Casserole Healthy
This recipe certainly has all the food groups and is a nutritious satisfying family meal. I would consider this a healthy dinner.
It does not fit into any specific diet such as low carb, Keto or Paleo. I’m okay with that 😆 But, if you happen to be looking for a low carb version, check this one out: Low Carb Taco Casserole Recipe
