TATER TOT CASSEROLE
This family friendly casserole is perfect for a weeknight meal. A simple homemade sloppy Joe base with onions and green peppers is topped with tater tots. Then just bake until the tots are browned, sprinkle with cheese, melt then serve.
INGREDIENT OPTIONS:
- Ground turkey can be subbed for the ground beef for a slightly healthier version.
- Use your preferred onions or peppers. Red, yellow or orange bell peppers work great.
- Use your preferred shredded cheese. I like shredded cheddar or shredded Colby/jack cheese.

SLOPPY JOE CASSEROLE
This SLOPPY JOE CASSEROLE is an easy dinner recipe that the entire family will love. Homemade sloppy joe meat topped with tater tots and cheese then baked to perfection.
Ingredients
- 1 tablespoon olive oil
- 1 medium yellow onion, diced
- 1 medium green bell pepper, diced
- 1 pound ground beef
- 2 cloves garlic, minced
- 1 tablespoon tomato paste
- ⅔ cup beef broth
- ½ cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 ½ teaspoons yellow mustard
- ¼ teaspoon salt
- ¼ teaspoon cracked black pepper
- 1 (32) ounce bag of tater tots
- 1 ½ cups cheddar or Colby/jack cheese, shredded
Instructions
- Preheat the oven to 400ºF.
- Lightly spray 9x13-inch baking dish with cooking spray and set aside.
- Heat the olive oil in a large skillet over medium-high heat. Saute the onion and bell pepper for 4-5 minutes or until they soften.
- Add the ground beef to the pan and cook for 6-8 minutes or until the beef is browned and cooked through. Drain excess grease if necessary.
- Add the tomato paste and garlic. Cook 1 minute or until fragrant.
- Add the broth, ketchup, Worcestershire sauce, mustard, salt, and pepper, and stir to combine. Bring to a gentle boil, then reduce the heat to low and simmer for 5 minutes.
- Spread the sloppy joe sauce into the bottom of the prepared baking dish.
- Top with a single layer of tater tots and bake for 25 minutes or until the tater tots are golden brown.
- Sprinkle the cheese over the top. Bake for another 5-10 minutes or until the cheese has melted.
- Allow the casserole to rest for 5 minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to four days. The leftovers are best reheated in the oven to restore some crispiness to the tater tots.
