Ingredient Options:
- Use store bought rotisserie chicken to make this quick and easy.
- Your preferred buffalo sauce will work.
- If you don’t like blue cheese, use you favorite cheese instead or just omit the cheese.
- I do not suggest storing these once assembled. You can make the baked potatoes in advance and assemble everything when you’re ready to serve. Store leftover ingredients separately.

BUFFALO CHICKEN BAKED POTATOES
These BUFFALO CHICKEN BAKED POTATOES are perfect for a easy weeknight dinner or game-day grub.
Ingredients
- 3 Medium Russet Potatoes, washed
- 4 Tablespoons Melted Butter - divided
- ¾ Cup Cooked Shredded Chicken, heated
- 3 Tablespoons Buffalo Sauce
- 3 Tablespoons Chopped Green Onion
- 3 Tablespoons Blue Cheese Crumbles
- Ranch Dressing
- Salt/Pepper - to taste
Instructions
- Preheat the oven to 450ºF.
- Using a fork, poke holes through washed potatoes.
- Place the potatoes on a standard baking sheet with a rack over the top of it and use a basting brush to coat them with melted butter.
Sprinkle each potato with a bit of salt and pepper. - Bake for 55 minutes or until fork tender.
- In a small bowl, mix together the shredded chicken and buffalo sauce.
- Split your potatoes and baste the inside with leftover melted butter.
- Sprinkle the insides of the potatoes with salt and pepper.
- Place about ¼ cup of the chicken mixture into each potato.
- Drizzle with extra buffalo sauce, if desired, then drizzle with ranch dressing.
