Where can I find the nutrition information for this recipe. I too love kale and quinoa, but the carbs are usually quite substantial and I need to limit carbs for diabetes reasons.

I don’t have much experience with nutrition info sites (I prefer to remain ignorant of the fat and calories, lol) But, I have heard good things about this website: http://www.myfitnesspal.com/recipe/calculator

Just discovered this recipe, thanks for sharing I will definitely try this. Kale is not my favourite vegetable, so anyway thats going to make it more appealing is a bonus.

Okay, I cooked a cup of quinoa but I think it actually made more than I needed. Just to clarify, you are measuring the actual cooked quinoa, correct? Thanks! Looks delish.
Nicole Harris says
I emailed you directly, so I hope you received my response. It is 1 cup of cooked quinoa. Enjoy!

Hi Nicole,
Excited to make this. Any difference in directions if I use a full sized muffin tin?
Nicole Harris says
I have always made this in mini muffin tins because I prefer small bites. You will need to bake a bit longer to ensure the middle gets cooked through. Enjoy 🙂

can you tell me how many calories are in this dish

Apologies, I don’t have nutrition info on my site. But, I know a lot of folks that use and love this site for nutrition info: https://www.myfitnesspal.com

I work long hours and hardly get any time to cook on weekdays. Therefore, I am planning to cook them on Sunday and freeze them for the rest of the week to use. Can you please suggest how long should I put them in oven after I take them out of the freezer?
Nicole Harris says
Apologies, I have never tried freezing these so I can’t say for sure.
Aimee says
I made these yesterday (delicious by the way!) and I have some leftovers in the fridge – Can I ask how long they will keep for?
Nicole Harris says
Apologies, I just found your comment. The quinoa bites keep well for 3-4 days in the refrigerator.
Jaclyn says
Do I have to use white quinoa??
Nicole Harris says
No, use what you have on hand
