How To: Pressure Cooker Artichokes in an Instant Pot
I have voiced my underwhelm about pressure cooking. I think many pressure cooking recipes are actually easier to prepare on the stovetop. But, much like my Pressure Cooker Chicken Bone Broth, the Instant Pot is amazing for cooking artichokes!
Seriously, perfectly steamed artichokes in 30 minutes or less…Unbelievable! Life-Changing! Amazing! WooHoooooo!
How To Prepare An Artichoke Before Cooking
First let’s prep the chokes. Using a very sharp knife, carefully slice the top off of your artichokes then slice off the stem.
At this point some people use scissors to trim all the spikes off of the ends of the leaves. I skip this step because once cooked the spikes aren’t so bad.
Run the artichokes under water to rinse. Then gently open the leaves on the top to loosen up.
How Long Do You Pressure Cook Small, Medium and Large Artichokes
Okay so, I never really intended on posting a pressure cooker artichokes recipe. I just went to a few online recipes to see how long to cook artichokes in my Instant Pot for my own personal dinner. They all seemed to say 8-12 minutes for medium/large chokes. Ummmm, nope. I had to start the pressure cooker all over again to get them cooked through. By that time (after waiting for the Instant Pot to pressurize twice) I may as well have cooked my artichokes on the stove.
So, for small artichokes I recommend 12-15 minutes. For medium artichokes I recommend 15-18 minutes. For large artichokes 20 minutes. And for jumbo I would go a few minutes longer. All with a manual release at the end.
I buy artichokes that are in the medium/large range and pressure cook them for 20 minutes.

How To Eat An Artichoke
If you’ve never eaten an artichoke, you are in for a treat. Just know there is a very particular way to eat an artichoke. Certain parts are inedible…big time! So check out this HOW TO EAT AN ARTICHOKE tutorial by the California Artichoke Advisory Board.
While I have been know to eat a jumbo artichoke alone as a meal, these pressure cooked artichokes will go great served next to Baked Lemon Pepper Chicken, Garlic Rosemary Whole30 Meatballs, Lemon Dill Baked Salmon or Spinach Artichoke Smothered Chicken.

Instant Pot Pressure Cooker Artichokes
Pressure Cooker Artichokes are quick, easy and come out perfectly tender. No more lengthy cooking times. These Instant Pot Artichokes are ready in just about 30 minutes.
Ingredients
- 3 Large Artichokes
- 1 Cup Water
- 3 Tablespoons Olive Oil, (optional)
- Flaked Sea Salt
Instructions
- Use a very sharp knife, carefully slice the top off of your artichokes then slice off the stem.
- Optional: use scissors to trim all the spikes off of the ends of the leaves.
- Run the artichokes under water to rinse. Then gently open the leaves on the top to loosen up the choke.
- Place the rack inside the Instant Pot. Add water and the artichokes. Drizzle oil in the top of each artichoke. Sprinkle with salt.
- Attach lid and set valve to sealed position. Pressure cook on high for 20 minutes. Manually release pressure.
- Serve with preferred dip. (I mix mayo, fresh parsley, fresh dill, lemon juice, salt and pepper)
Notes
3 large artichokes fit inside an Instant Pot. For 4 servings, buy small/medium artichokes.

Thank you for pointing out that in no world does an artichoke larger than small cook in less than 15 minutes. I made some JUMBO ones – couldn’t even get 2 into my six-quart IP at once – and started at 27 minutes, natural release for 15. Nope. Not done. Put it back on for another 12, and that worked much better. Probably would have taken two hours on the stove, though 😀

Thought I would add what we use for dips…We love artichokes and in NE Georgia they are not an easy find, however, Ocean Mist has been supplying our Wally this year and we have been able to almost eat our fill. So first off pressure cooking artichoke4s is the easiest. If you do get large artichokes, 25 to 30 minutes is my recommendation too. You want them soft and delicious. SO AS FOR DIPS – well, my hubby is a hardened – mayo only user. On the other side, I prefer butter softened with lemon squeezed in it. WE are the old fashioned don’t spoil the wonderful taste of this vegetable just keep it simple and enjoy it. Thank you for sharing the information – sometimes, I just need a quick reminder and your article was great!

My dip? We use mayo, butter, ranch, lemon juice and parsley. We melt and whisk it together. Beware, you may not notice it dripping gown your chin. 🙂
