Vanilla Iced Coffee – Keto Friendly
I am a coffee obsessed fiend. One of the main reasons that the low carb lifestyle works for me is because I don’t have to give up my precious creamy iced coffees.
Any diet that doesn’t allow creamy coffee. . . or even worse, no coffee at all. . . well that is a total deal breaker.
This Homemade Keto Iced Coffee is great if you are really wanting to control the ingredients or are just trying to save some money by not going to Starbucks twice a day. Both totally legit reasons to start making your vanilla iced coffees at home.
Ingredients Needed For Keto Vanilla Iced Coffee (screenshot for grocery list)
- Ice
- Cold Brew Coffee
- Liquid Monkfruit Sweetener → I use Lakanto Liquid Sweetener
- Vanilla Extract
- Heavy Cream
What Sweetener To Use
I love the Lakanto Monkfruit sweeteners. But sugar free Keto friendly sweeteners seem to be extremely different to taste and preferences depending on each individual. What tastes good to one person tastes awful to another. I for instance cannot even consider using a stevia based sweetener.
So, use whichever sweetener you prefer. The liquid sweetener is necessary for this recipe because granular sweeteners will just sink to the bottom.
What Cream or Milk To Use
Heavy cream is my go-to for an extra indulgent creamy iced coffee. If you are dairy-free or just prefer the taste of coconut milk, that can be used in place of heavy cream.
How To Make Cold Brew Coffee
Cold brew coffee is made by soaking coffee grounds in water overnight. The water is not heated. Here is a great tutorial for making cold brew at home: How To Make Cold Brew Coffee At Home
I used to make it at home but thoroughly disliked the clean up and disposal of all those coffee grounds. With the amount of grounds I had to use I decided it was worth it to just buy cold iced coffee brew. I use STOK Unsweet Cold Brew.
How To Make Keto Iced Coffee
- Fill 16 ounce cups with ice.
- Pour in 1 cup cold brew coffee.
- Add about 6 drops of liquid sweetener – to taste.
- Add 1/4 teaspoon vanilla extract.
- Top with heavy cream and stir to combine.

Notes
If you like the Torani Vanilla Sugar Free Syrup, that can be used in place of the vanilla extract and sweetener.
