Overnight oats or refrigerator oats or no-cook oats are fantastic for starting the day in a healthy way. Very minimal preparation the night before and you have a delicious nutritious breakfast ready for you in the morning.
Eat cold or heat in the microwave – however you prefer. These also make a fantastic grab and go work lunch. I used to bring overnight oatmeal for lunch back in my office cubical days.
Ingredient Options:
- Old Fashioned Rolled Oats work best. I have used steel cut oats and if you don’t mind a bit more texture those work too.
- Use whatever fruit you prefer. Seriously – any fruit, fresh or dried will work.
- Milk – I prefer coconut or almond milk. But regular milk works as well.
- The graham crackers can be omitted. They just add a little sweet and crunch.
- Regular yogurt works or omit yogurt and add a bit more milk.
- Honey can be substituted with maple syrup or agave.
- For a vegan version – omit graham crackers and yogurt (or use vegan yogurt), use nut milk and swap the honey with maple syrup.
