Who doesn’t love a good comforting casserole recipe? Especially for the busy back to school season or the chilly winter months that are right around the corner.
Typically I make my casseroles with noodles. Not really sure why, just habit I suppose. But this creamy, cheesy wild rice casserole has me rethinking my entire casserole routine! This casserole also has Foster Farms Organic Ground Turkey, spinach and artichokes. {side note} I’m kind of obsessed with adding the spinach and artichoke combo to everything possible lately. So we’ve got cheese, rice, turkey, spinach and artichokes. That is one super satisfying and nutritious meal!
My daughter isn’t a fan of rice (except on her sushi rolls, go fig) and after eating this for dinner she immediately requested it in her school lunch the next day. This was during the recipe testing process so I assured her that she would get to eat this meal many, many more times. True Story.
While the spinach-artichoke combo is a guaranteed hit for me, I also loved the turkey in this dish. This meal comes together rather easily. You could even use quick-cook wild rice to make this meal come together quickly. And if you want to shave off a few extra minutes, feel free to skip the baking. Cook up everything on the pot, top with cheese and serve without baking. I prefer the golden cheese topping but some nights are so crazy busy that just getting a homemade meal on those plates is a success.

Ground Turkey Spinach Artichoke Wild Rice Casserole
Turkey Spinach Artichoke Wild Rice Casserole is perfect for those busy weeknights. This family dinner recipe is nutritious and full of flavor!
Ingredients
- 1 Cup Dry Wild Rice
- 16 onces Foster Farms Organic Ground Turkey
- 1/4 Cup All Purpose Flour
- 1Β½ Cups Whole Milk
- 2 teaspoons Dry Italian Seasoning (no salt)
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- 1/2 teaspoon Kosher Salt
- 1/2 teaspoon Ground Pepper
- 6 ounces Fresh Bagged Spinach, (don't worry, it will shrink)
- 12 ounce Jar Marinated Artichoke Hearts - chopped, (14 oz can artichoke hearts can be used instead)
- 2Β½ Cups Shredded Mozzarella Cheese
Instructions
- Prepare wild rice according to package instructions. Set aside.
- Preheat oven to 375°F
- In large pot over medium/high heat, brown turkey.
- Reduce heat to medium. Sprinkle in the flour and immediately stir to coat. Cook while stirring for 30 seconds.
- Add milk, Italian season, garlic powder, onion powder, salt, pepper and spinach.
- Stir and cook until sauce begins to thicken and spinach wilts. Add chopped artichokes.
- Cook and stir 1-2 more minutes or until mixture is bubbling.
- Stir in rice. Add additional salt/pepper to taste if needed.
- Remove mixture from heat. Transfer to a 2qt casserole dish. Top with shredded cheese and bake for 15 minutes.
- Broil on high for 1-2 minutes to brown top.
- Let cool for 5 minutes before serving.

First thought since I’m not a fan of artichokes (none in the can are organic) would be asparagus. Can’t take credit for it, googled artichoke substitutes. Will try!

Made this with leftover turkey from the Thanksgiving turkey and it was delicious. Just warned the turkey meat in the pan and added extra olive oil for the flour slurry. It turned out delicious. A new favorite! I will definitely make this again.
