Homemade banana bread and creamy coffee . . . that is my ideal breakfast. This Super Moist Banana Bread Recipe has a unique twist, I roasted the bananas before making this bread. It gives the flavor just a little something extra special. Roasting the bananas is also a great trick if you do not have extra ripe bananas for your bread.

Banana Bread for breakfast is a real treat. It doesn’t happen all of the time. But when it does, my day is off to a good start!
In fact, it is crazy that this is my first official banana bread recipe. It is one of my favorite treats. Usually I request banana bread for my birthday instead of cake. That is how much I love it!
This banana bread is super moist. With 4 bananas, Greek yogurt and milk . . . there is no way this will be dry! Just make sure to cook it long enough so you don’t end up with gooey bread. The great thing about making a super moist bread is that you can slice it and eat it for several days without it getting stale. And this recipe uses a bit less sugar than traditional banana bread recipes.
Then pour yourself a cup of coffee. Add some International Delight Simply Pure coffee creamer to your cup. Grab a slice of Roasted Banana Bread and relax. Now that’s my idea of a GOOD MORNING!

Super Moist Banana Bread
Ingredients
- 4 Bananas, roasted - see instructions
- 1½ Cups All-Purpose Flour
- 2 teaspoons Baking Powder
- 1/2 teaspoon Sea Salt
- 2 Large Eggs
- 1/2 Cup Plain Greek Yogurt
- 1/2 Cup Whole Milk
- 2 Tablespoons Softened Unsalted Butter
- 1/3 Cup Dark Brown Sugar
- 1 teaspoon Vanilla Extract
- 1/2 Cup Chopped Pecans or preferred nut, optional
Instructions
Roasting Bananas
- Preheat oven to 400°F
- Remove banana peels and slice each banana in half, lengthwise. Place bananas flat side down on a rimmed baking sheet that has been generously coated with oil. Brush tops of bananas with additional oil.Roast for 20-25 minutes, flip bananas half way through. Cool 5-10 minutes before making bread. *Do not roast bananas too far ahead of time because they will become tough and dry*
Banana Bread
- Preheat oven to 350°F
- Mix flour, baking powder and salt. Set aside.
- Mix eggs, mashed roasted bananas, Greek yogurt, milk, butter, sugar and vanilla.
- Stir in chopped nuts and dry ingredients until it becomes a thick batter.
- Transfer batter to a standard loaf pan that has been sprayed with nonstick.
- Bake for 47-50 minutes or until a toothpick can be inserted and removed clean.
- Allow bread to cool in pan for 5 minutes then transfer to a cooling rack.
- Once cooled, slice and serve.
