Chicken Salad is great for meal prep because it can be made ahead and eaten in so many ways. Also, the flavor combinations are limitless. This Red Curry Chicken Salad is for those that want a unique twist and punch of flavor in their chicken salad.
I enjoy this particular chicken salad over rice. But if you are going low-carb, it is fantastic over cauliflower-rice or on top of salad greens.

- Combined all ingredients in large bowl then mix. Adjust the amount of mayo and curry paste to your preferences.
- Serve over rice, salad, on a sandwich, in a wrap or alone.

- 3 Cups Pulled/Shredded Chicken
- 3 Celery Ribs - chopped or sliced
- 1/2-3/4 Cup Mayonnaise - to preference
- 1-2 teaspoons Red Curry Paste - to taste
- Handful Fresh Cilantro - chopped
- Juice of 1/2 a Lime
- Salt/Pepper - to taste
Instructions
