Whole 30 Paleo Compliant Bacon Ranch Chicken Salad
It is no secret that I LOVE my chicken salad recipes. They are one of the most popular types of recipes on my site. So you all must love chicken salad too.
Chicken Salad is my go-to when I’m doing a round of Whole30 because a small amount is filling and it can be made in so many ways. It can be waiting in the fridge for those hangry moments and is great for meal prepping lunches. Having quick and easy food stocked in your refrigerator is the key to Whole30 success.

You can cook the chicken however you prefer: grilled, pan fried or even use a rotisserie chicken.

In the video I mentioned the bacon is Paleo/Whole30 friendly (no sugar, nitrates, preservatives). Pederson’s has a Whole30 approved bacon. This particular bacon works for me because I do a round of Whole30 every January and usually again around summertime, the rest of the year I adhere to the Paleo Diet. So if you are interested in Whole30 approved bacon only, I just wanted to be clear on this.

- For best results, pre-mix the mayo with ranch ingredients before adding to chicken.
- More bacon is totally acceptable.
- Dry spices will work as well. Decrease the amount of dried spices by approximately half.

- 12 ounces Boneless, Skinless Chicken Breast
- Olive Oil
- 5 ounces Bacon*, (cooked & chopped)
- 2 Celery Stalks, (chopped)
- 1/4 Cup Finely Chopped Red Onion
- 1 Cup Mayonnaise
- 1 teaspoon Garlic Powder
- 1/2 teaspoon Onion Powder
- 3 Tablespoons Finely Chopped Fresh Parsley
- 2 Tablespoons Finely Chopped Fresh Dill
- 1/2 teaspoon Sea Salt
- 1/2 teaspoon Fresh Cracked Pepper
- Preheat oven to 425ºF
- Salt and pepper chicken breasts, grease roasting dish with oil and place chicken in roasting dish.
- Bake for 25-30 minutes or until internal temp reaches 165ºF (time varies depending on thickness)
- Let cool then shred or chop.
- Combine all ingredients with chicken. Mix until thoroughly combined.
- Serve over salad, on wraps, sandwiches or alone.
*My preferred bacon preparation method:
Preheat oven to 400ºF. Line baking sheet with foil and spray or grease with oil. Lay bacon flat on baking sheet. Bake for approximately 15 minutes or to desired doneness. (flip half way through)
