I shoot my recipes early in the day so sometimes I have leftovers to reheat and serve for dinner. If I’ve been working on non-dinner foods all day, the last thing I want to do is cook a full meal at 5pm.

Can you omit the lemon?
Of course. I love the bright lemon flavor on my asparagus. But, if it’s not your thing or you just don’t have a lemon on hand, feel free to leave it off.
What other kinds of oils can be used?
Any cooking oil you prefer. I use avocado oil or olive oil. I’ll throw some butter in there if I’m feeling really fiesty!
What should you serve this with?
This roasted asparagus will go with just about any protein. It would also be fabulous with a risotto dish!
I served this roasted asparagus with Cast Iron Flank Steak. It would also be great with Lemon Garlic Chicken Drumsticks, Lemon Butter Chicken Thighs or Pan Seared Tuna Steak.

Oven Roasted Asparagus Recipe
This Oven Roasted Asparagus Recipe is great for a quick, easy, and nutritious side dish. Perfect with beef, pork, chicken, fish or a vegetarian dinner. Just 3 ingredients to a fresh and flavorful vegetable dish.
Ingredients
- 12-16 ounces Fresh Asparagus, (ends trimmed)
- 3-4 Tablespoons Avocado Oil, (or olive oil)
- Juice from 1/2 Lemon
- Flaked Sea Salt
Instructions
- Preheat oven to 425ºF
- Place asparagus in an even layer on a rimmed baking sheet sprayed with nonstick.
- Drizzle oil over asparagus and toss to coat.
- Roast in oven for 5 minutes then flip. Roast for 5-10 minutes depending on thickness and desired tenderness.
- Remove from oven and immediately squeeze lemon juice over asparagus and sprinkle generously with salt.
Notes
*A dark baking sheet will give your asparagus more of a browned color, if that's what you're going for.
