Avocado Tomato Salad Recipe with Heirloom Tomatoes and Hemp Seeds
This salad absolutely screams summertime! It is fresh, satisfying and nutritious. Basically, if you’ve ever wanted to just eat salsa or guacamole with a spoon, this salad is for you 😆
I picked up an entire flat of gorgeous heirloom tomatoes at a fruit stand right outside of Los Molinos, California. It’s called Julia’s Fruit Stand and if you’re ever driving around the middle of nowhere Northern California, it’s the place you wanna go. I also got a flat of fresh figs but those didn’t make it into a recipe. I ate them all!
I’m glad I made this tomato salad because my stupid refrigerator froze the last few remaining tomatoes. What a waste.
How long does this salad last in the refrigerator?
This salad stays good for about 2 days. After that it can get a little sloppy from all the tomato juices.
What if you don’t have hemp seeds?
You can order hemp seeds online (click here). I found mine at Grocery Outlet and I recently noticed that Trader Joe’s now carries hemp seeds. Or, feel free to leave them out. This salad will still be great!
What can you use instead of cilantro?
I know, I know. The ever dividing cilantro debate. If you want to add a fresh herb, parsley can fill in. Or you can just omit the cilantro, it is not absolutely vital to this recipe.
