Easy Turkey Meatloaf with English Pea Puree
Ingredients
Meatloaf
- 2 Lbs Ground Turkey
- 1½ Cups Panko Bread Crumbs
- 2 Large Eggs
- 1/2 teaspoon Pepper
- 1 teaspoon Salt
- 1 teaspoon Garlic Powder
- 1/4 teaspoon Cumin
- 1 teaspoon Finely Chopped Flat Leaf Parsley
- 2 Tablespoons Olive Oil
- 1/2 Cup Unsweetened Silk Soymilk
Pea Puree
- 2 Cups Shelled English Peas
- Pinch Salt/Pepper
- 1 Tablespoon Fresh Lemon Juice
- 1 Tablespoon Chopped Flat Leaf Parsley
- 3 Tablespoons Olive Oil
- 1/4 Cup Unsweetened Silk Soymilk
Instructions
Meatloaf
- Preheat oven to 350°F
- Combine all meatloaf ingredients in large bowl. Use your hands to mix.
- Transfer meat mixture to a large bread loaf pan to form. Invert loaf pan onto roasting pan that has been lined with foil and sprayed with nonstick.
- Bake meatloaf for 1 hour or until cooked through. Broil 2-3 minutes to brown top.
Pea Puree
- Drop peas into salted and boiling water for 90 seconds. Drain and transfer to an ice bath for 2-3 minutes. Drain and set aside 1/2 cup peas.
- Transfer the remaining 1½ cups peas to blender or food processor.
- Add the remaining puree ingredients and blend until smooth.
- Serve meatloaf topped with pea puree and whole peas.
