One Pot Dinner Recipe
Hey, I’m all about the One Pot meals. Who in their right mind wants to wash dishes!?!? Not me.
Confession: Some nights I make sandwiches for dinner just so I don’t have dishes to wash. {okay, many nights}
Okay, okay, since I’m confessing . . . some night I’m too lazy to even make a sandwich. I put together an assortment of fruit, cheese and crackers and serve it to my 4 year old as a ‘Snack Dinner’. By the way, that is her favorite meal. I’m not sure if I should be offended by that.
It’s nice to have some easy, mess-free dinner options for those lazy nights. Although, I still make sandwiches for dinner on the regular.

One Pot Lasagna Casserole
This easy weeknight dinner will be a new family favorite. One Pot Lasagna Casserole at your dinner table in 30 minutes or less!
Ingredients
- 1 lb Ground Beef 80/20%
- 1/2 White Onion - chopped
- 2 Cups Water
- 1 Can Petite Diced Tomatoes, 28oz
- 1 Can Tomato Paste, 6oz
- 2 Cups Uncooked Pasta*
- 1 Zucchini - sliced then quartered
- 12 ounces Button or Crimini Mushrooms - quartered
- 1/2 teaspoon Garlic Powder
- 3 Garlic Cloves - chopped
- 1/4 teaspoon Dried Oregano
- 1/4 teaspoon Dried Basil
- 1/4 teaspoon Onion Powder
- 1/8 teaspoon Dried Thyme
- 1/2 teaspoon Sea Salt
Instructions
- In a 3.5 quart pot (or larger) over medium heat, lightly brown ground beef with onion. Drain and return to pot.
- Add zucchini, mushrooms and garlic. Cook for 3 minutes.
- Add dried herbs/spices, salt, water, tomatoes, and tomato paste. Bring to a boil.
- Add uncooked pasta, reduce heat to low. Cover and simmer for 10-15 minutes, stir occasionally. (until pasta is cooked)
- Remove from heat. Serve with ricotta, parmesan and basil.
Notes
*I used Tirali pasta. Use your preferred noodle. Some stores sell miniature lasagna noodles that would be perfect in this.

This was really good! I kind of just winged it. I added bacon and used fresh herbs and tomatoes. I had cheese ravioli on hand so it ended up beingmore liquidy than it was probably supposed to be but we added a nice crusty bread to sop up the juices and it was perfect. Topped it with a little fresh grated parmesan and boom…. dinner.

Thanks Hannah! I’m not sure about the crockpot method. I’ve only made it on the stovetop. I imagine it will work. Just add the pasta to cook shortly before serving. Let me know if you give it a try.
