Although I love watermelon, I can never quite finish an entire melon. I’m always left with half of a melon that is turning soft and liquidy.I certainly don’t like to just throw it in the trash. But it isn’t enjoyable to eat by the slice once it gets to that consistency.So here is my solution … Make a Watermelon Granita!
It’s super simple. It just takes a blender and some patience.The amounts and measurements are approximate because melons vary in size and sweetness. I pureed half of a watermelon, because the melon is over-ripe it basically turns into a liquid.

Add 2-4 tablespoons of sugar, depending on how sweet your melon is. Pour liquid into a dish (I use an 8×8 inch glass baking dish). Cover with plastic wrap and place in the freezer.
Stir with a fork every hour until it has transformed into watermelon ice crystals. Mine took about 4 hours, but this also depends on freezer temperature and the size of the container.
Once all the liquid has turned into ice, it is ready to eat.
It is a Double Bonus…You now have an ice cold watermelon snack to enjoy.
And you don’t have to feel bad about wasting a perfectly good melon.
