Mexican Street Corn Salad Recipe
INGREDIENTS
Fresh Corn
Lime Juice
Jalapeños
Avocado or Olive Oil
Cherry or Grape Tomatoes
Cilantro
Crumbled Queso Fresco
Chili Powder
Salt
INSTRUCTIONS
Grill or cook corn using preferred method. Cut corn kernels from cobs. In a large bowl stir together corn, lime juice, oil, jalapeño, tomatoes, cilantro and chili powder.
Gently toss in queso fresco. Salt to taste. Serve with additional queso fresco and cilantro.

This recipe can easily be made vegan - just omit the cheese
Traditional street corn uses cotija cheese which is an aged hard and salty cheese. Queso fresco is a creamier mild cheese. If you like cojita feel free to use it in this corn salad
You can cook the corn via air fryer, roast, grill, boil or pressure cook.
