Crostini with Garlic Herb Butter
Everyone knows that I love my ice creams, but appetizers and little nibbles are my all-time favorite food. There is nothing better than a table covered with a variety of appetizers and dips. I love all of the difference flavors, textures, colors and smells.
These crostini have it all . . . the amazing flavors of tomato and basil, the crisp toasted bread and creamy butter , the gorgeous deep red color of the tomatoes and of course the unbelievable aroma of garlic and basil. That is one perfect bite!
The aroma is where this recipe first began. I was at my local farmer’s market {my usual Saturday morning routine} and I kept noticing the most amazing scents. Of course, there are a lot of fantastic smells at the farmer’s market. So I had to follow my nose like a bloodhound on a hunt. It led me to a vendor that was selling tomatoes so ripe they could burst at any moment and bundles of vibrant basil.
Sniff . . . Sniff . . . yes this was the unbelievable scent that was in the air!
I took home my farmer’s market bounty, roasted some garlic, whipped up the compound butter then toasted some crusty bread . . . BadaBingBadaBoom . . . Tomato Crostini with Basil and Roasted Garlic Compound Butter!
Compound butter is one of those things that sounds super-duper-fancy-pants but is really simple to make. It is basically mixing your desired flavors into softened butter then allowing the butter to get firm in the refrigerator.
This Basil and Roasted Garlic Compound Butter would be great on more than just crostini. Try it on steak, potatoes, roasted vegetables, over rice, quinoa or pasta. I don’t slather butter on everything that I eat, but when I do I really go for it!
