CUCUMBER ONION SALAD
Cucumber Onion Salad is a fresh and flavorful side dish made with just a few simple ingredients. Sliced onion and cucumber tossed in a tangy vinegar dressing.
ONION OPTIONS:
I strongly recommend using red onions for this recipe. If for some reason that is not an option, sweet onions or scallions will work too.
CUCUMBER OPTIONS:
Use English cucumbers. Slicing cucumbers are too wet and seedy.
ONION PREPARATION:
If you want to soften the onions and create a more mild flavor, soak the sliced onions in the vinegar for 20-30 minutes before preparing the salad.
CUCUMBER SALAD STORAGE INSTRUCTIONS:
Store any leftovers in an airtight container in the refrigerator.
It is best to prepare this right before serving. If it is left too long, the moisture from the cucumbers will make it slightly soggy.

ONION DILL CUCUMBER SALAD
This Fresh Onion Dill Cucumber Salad Recipe is the perfect light side dish for any meal. Great for dinner, barbecues, potlucks and holidays.
Ingredients
- ⅓ cup white wine vinegar
- 3 tablespoons water
- 2 tablespoons granulated sugar
- 1 teaspoon salt
- ½ teaspoon pepper
- 2 large chilled english cucumbers, thinly sliced
- 1 medium red onion, thinly sliced
- 2 tablespoons freshly chopped dill
Instructions
- In a medium dish or bowl, combine the vinegar, water, and sugar until the sugar has completely dissolved.
- In a very large bowl, add the sliced cucumbers and the sliced onion. Add the salt and pepper.
- Pour the vinegar mixture over the cucumbers.
- Add the fresh dill. Mix everything together gently to coat the cucumbers. Let the mixture sit for 5 minutes before serving.
- Serve chilled.
