I am a big soup fan. I mean, there are just so many variations and flavors to choose from. You could eat a different soup every day of the year and still have not tried them all.
Winter calls for the long simmering warm-you-up soups. Once the temperatures rise we need some easy, breezy, lighter soups. This Easy Pea Soup Recipe is all of those. You can whip up this soup in about 15 minutes, eat it hot or cold and it makes great leftovers!
Earlier this year I was sent this Vitamix to try out and it is now one of my most favorite kitchen appliances. I use it almost every day! Smoothies, hummus, daiquiris and soups . . . this is my new kitchen bestie. In fact, I don’t even feel right about referring to my Vitamix as a blender. I’ve had blenders. The Vitamix is like The King of all blenders! No Joke. I have been enjoying the creamiest hummus, the slushiest daiquiris and the silkiest soups. As far as I’m concerned my Vitamix isn’t a blender . . . it’s a MACHINE!

So this soup. It is a simple blend of frozen peas, lemon and thyme. It is super lemony (just the way I like it). So if you want a little less tangy, go ahead and decrease the lemon. And don’t forget that crème fraîche swirl for the ultimate pea soup experience!

Easy Pea Soup with Lemon and Thyme
Ingredients
- 16 ounces Frozen Peas - thawed
- 1/2 Cup Fresh Lemon Juice *, 2-3 lemons
- Leaves from 1 Sprig of Fresh Thyme
- 1 Tablespoon Sugar
- 1/2 teaspoon Sea Salt
- 1/4 teaspoon Ground Pepper
- 2 Tablespoons Olive Oil
- 1/2 Cup Water, add more for a thinner soup
Toppings
- Crème Fraîche
- Flaked Sea Salt
- Fresh Thyme
Instructions
- Process all soup ingredients in blender until smooth. (Using Vitamix - process on variable 7 until smooth then process on high for 30 seconds.)
- Serve cold or transfer to pot over medium/low until hot.
- Serve with salt, fresh thyme and crème fraîche.
Notes
*This amount of lemon juice produces a tangy soup. Decrease this amount if a more mild flavor is preferred.
