Oven Roasted Potatoes (Whole30, Vegan, Gluten Free, Dairy Free)
Mmmmmm… Oven Roasted Potatoes. Now this is my comfort food. Most people have a weakness to carbs in some way be it bread, pasta, rice or sugar. I am all about the potatoes. I just love a potato with a crispy crust and creamy inside.
These roasted potatoes are all of that! And these make a super simple side dish. Just roast the potatoes in the oven with a little salt, pepper and olive oil. That’s it!
I could eat roasted potatoes as a full on meal. But, obviously these make a wonderful side dish to just about any main course.
The selling point for the Whole30 program is that potatoes are allowed. I’d trade all the sweeteners in the world for some potato action! Strict Paleo does not allow white potatoes but does allow honey and maple syrup. While I love maple syrup, I love potatoes more. And Whole30 allows them in moderation.
Of course, when I’m eating Paleo I still enjoy my white potatoes anyway. So I guess it doesn’t really matter to me.
These Potatoes. They have that great golden brown crust with the soft, fluffy insides. I slice the potatoes in half lengthwise then slice the rounded side without cutting all the way through. Sort of like a mini hasselback potato.
This makes them prettier (in my opinion) and helps them to cook through evenly. It is totally optional. So if you want to skip this step . . . skip it.
Once the potatoes are roasty and toasty you are ready to go. These oven roasted potatoes are perfect for breakfast, lunch or dinner!

Well, any small potato will work just fine. Small red potatoes would be excellent!
Are these oven roasted potatoes good for you?
Yes! Potatoes get a bad wrap. But they are high in vitamins and fiber. Of course, if losing weight is a goal you do want to eat potatoes in moderation because of the carbs. Natures Carbs 😃
Oven Roasted Potatoes
These Simple Oven Roasted Potatoes are absolute potato perfection! Golden brown and crispy on one side, creamy and dreamy on the other. This recipe is great as a side dish for just about any meal!
Ingredients
- 1½ lbs Baby Gold Potatoes
- Olive Oil
- Salt/Pepper
- Fresh Parsley
Instructions
- Preheat oven to 400°F
- Slice potatoes in half lengthwise. Make several slices on the rounded side without cutting through completely. Generously oil a rimmed baking sheet. Transfer potatoes to baking sheet, flat side down. Brush tops of potatoes with olive oil.
- Roast potatoes for 35 minutes. Carefully flip potatoes and sprinkle with salt and pepper. Roast 5 more minutes.
- Serve with salt and pepper to taste, fresh parsley and Marzetti® Veggie Drizzle™ finishing sauces.
