Ingredients

  • 15 ounces Canned Chickpeas garbanzo beans - drained, rinsed*
  • 16 ounces Grape Tomatoes - halved
  • 1 Large Cucumber - peeled chopped
  • 2 Garlic Cloves - grated or finely chopped
  • 1 Large Bunch Curly Parsley - finely chopped
  • 10 Mint Leaves - finely chopped
  • Juice of 1/2 Lemon
  • 1/2 Cup Olive Oil
  • Salt/Pepper - to taste
  • Small Pinch Sugar**

Instructions

  • Prep all ingredients.
  • Mix then serve.

Notes

*I like the skins peeled off the chickpeas, this is an optional step.
**The sugar is optional, it balances the acidity. Start with just a tiny bit, taste then add more if needed.
