Ingredients

  • 8 oz cream cheese softened
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 ½ cups Cool Whip
  • 1 ½ cups crushed graham crackers
  • 4-6 parfait serving cups
  • STRAWBERRIES:
  • 1 lb fresh strawberries hulled and diced
  • 3 tablespoons granulated sugar
  • 2 teaspoons lemon juice

Instructions

  • Mix together strawberry ingredients and set aside.
  • Beat cream cheese and granulated sugar with an electric mixer until smooth. Add lemon juice and vanilla extract into the mixture. Mix.
  • Fold Cool Whip into the cream cheese mixture until just combined.
  • Divide half of the crushed graham crackers between serving cups.
  • Scoop in half of the cream cheese mixture between the serving cups and smooth out the tops.
  • Divide half of the diced strawberries amongst each cup.
  • Repeat the layers with the remaining ingredients.
  • Chill parfaits in the refrigerator until ready to serve.
