Ingredients

Grapefruit Vinaigrette

  • 1/2 Cup Fresh Grapefruit Juice
  • 1/2 Cup Olive Oil
  • 2 teaspoons Stone Ground Dijon Mustard
  • 1 Tablespoon Honey
  • Pinch Salt/Pepper

Salad

  • 3 Cups Cooked Tri Color Quinoa prepare according to package instructions
  • 1 Cup Micro Greens
  • 10-15 Sugar Plum Tomatoes - halved
  • 1 Avocado - peeled pitted and sliced
  • 1 Lb Boiled Shrimp - warm or cold
  • Flaked Sea Salt
  • Cilantro optional

Instructions

Grapefruit Vinaigrette

  • Combine all dressing ingredients in a glass jar. Secure jar lid and shake vigorously. Drizzle over salad.

Salad

  • Arrange all salad ingredients then top with salt and cilantro. Dress with Grapefruit Vinaigrette.
