Preheat the oven to 350º F. Spray cake pan with nonstick. Set aside.
Mix together pumpkin puree, half and half, milk, pumpkin pie spice, salt, eggs, both sugars, and vanilla in an extra large mixing bowl until fully combined.
Chop bread into large chunks.
Add bread chunks to the bowl with the pumpkin mixture. Soak for about 10 minutes.
Transfer mixture into your prepared pan, making sure that it’s an even layer. Bake 40-45 minutes or until firm and not soggy.
Remove from the oven and let rest for about 10 minutes before garnishing and serving.
