Pineapple Chicken Kabobs Recipe

This Pineapple Chicken Kabobs Recipe is a great way to enjoy chicken skewers without even turning on the grill. These chicken kabobs are loaded with chicken, fresh pineapple, peppers and onions, slathered with Asian glaze then baked to perfection. A great weeknight dinner idea!

Ingredients

  • 1 Small Fresh Pineapple - cut into 1-2 inch chunks
  • 2 Red Bell Peppers - seeded cut into large chunks
  • 1 Red Onion - cut into large chunks
  • 2 Lbs Chicken Breast - cut into 2 inch chunks
  • 2-3 Tablespoons Oil
  • Salt/pepper
  • 2 Tablespoons Soy Sauce
  • 1 Tablespoon Toasted Sesame Oil
  • 1 teaspoon Garlic Powder
  • 2 Tablespoons Brown Sugar
  • 1 teaspoon Chili Sauce
  • 1 teaspoon Cornstarch

Instructions

  • If using wooden skewers soak in water for 15 minutes prior to kabob assembly.
  • Preheat oven to 450ºF
  • Cut pineapple, peppers, onion and chicken into chunks large enough to skewer. Toss with oil, salt and pepper.
  • Skewer chicken, peppers, onion and pineapple. Transfer kabobs to greased rimmed baking sheet.
  • Bake for 20 minutes then brush with sauce. Broil on high 3-5 minutes or until chicken is cooked through.
  • Sauce:

    Combine soy sauce, sesame oil, garlic powder, brown sugar and chili sauce. Slowly add in cornstarch while whisking.

Notes

If not cooking and serving immediately, place peppers around chicken pieces and the pineapple between. This will prevent the fruit acids from breaking down the chicken.
For a shortcut use store bought Teriyaki Sauce instead of this homemade sauce.
