Ingredients

  • 6 Bone-In Pork Chops approx 1″ thick
  • Oil
  • Salt/Pepper
  • 2 Lbs. Vine Tomatoes
  • 1/2 Cup Pesto
  • Shaved Parmesan Cheese

Instructions

  • Preheat oven to 425ºF
  • Generously grease rimmed sheet pan.
  • Coat pork chops with oil, salt and pepper. Transfer to sheet pan. Place tomatoes beside chops and brush with oil.
  • Bake 20-25 minutes or until desired doneness. Top with pesto the last 2 minutes of cook time.
  • Serve topped with parmesan.
