Ingredients

  • 1 Cup Old Fashioned Oats
  • 1 Cup Raw Pecans (chopped)
  • 1/2 Cup Unsweetened Coconut Chips
  • 3 Tablespoons Melted Coconut Oil
  • 1/4 Cup Maple Syrup
  • 1/2 teaspoon Cinnamon
  • 1/4 teaspoon Sea Salt
  • 1/2 Cup Dried Apricots (chopped)

Instructions

  • Preheat oven to 275ºF
  • In large bowl, combine oats, pecans and coconut chips.
  • Stir in coconut oil. Then add maple syrup, cinnamon and salt. Mix.
  • Transfer to a rimmed baking sheet lined with parchment paper. Spread in a thin even layer.
  • Bake for 45-50 minutes or until no liquid remains. Stir half way through.
  • Remove from oven and immediately stir in apricots. Allow granola to cool completely before transferring to an airtight container.
