Prevent your screen from going to sleep
Preheat oven to 325ºF
Whisk together eggs, milk salt and pepper. Set aside.
Generously spray a 12 cup muffin tin with nonstick spray.
Divide the sausage and tomatoes between the 12 muffins.
Pour egg mixture into each muffin cup (make it as even as possible). Drop 1 teaspoon of salsa into each cup. Sprinkle cheese on top.
Bake for 15-18 minutes or until the edges begin to brown.
Remove from muffin tin and transfer to container. Store in the refrigerator.
To reheat, microwave sausage egg muffin for 20-30 seconds.
If reheating from frozen. microwave 30-60 seconds.
