Ingredients

  • 8 O Organics Large Eggs
  • 1/4 Cup Milk
  • Pinch Salt/Pepper
  • 3 O Organics Hot Italian Organic Chicken Sausage (chopped)
  • 12 O Organics Grape Tomatoes (chopped)
  • 4 Tablespoons O Organics Mild Salsa
  • 1 Cup Mexican Style Blend Shredded Cheese

Instructions

  • Preheat oven to 325ºF
  • Whisk together eggs, milk salt and pepper. Set aside.
  • Generously spray a 12 cup muffin tin with nonstick spray.
  • Divide the sausage and tomatoes between the 12 muffins.
  • Pour egg mixture into each muffin cup (make it as even as possible). Drop 1 teaspoon of salsa into each cup. Sprinkle cheese on top.
  • Bake for 15-18 minutes or until the edges begin to brown.
  • Remove from muffin tin and transfer to container. Store in the refrigerator.
  • To reheat, microwave sausage egg muffin for 20-30 seconds.
  • If reheating from frozen. microwave 30-60 seconds.
